Food pairing:
Decanted 30 minutes before serving. Bright purple core fading to a cherry then clear outer rim. There are hints of light brown/burnt orange in the colour. A simple, tight nose revealing only hints of cassis, earth and tobacco. The palate is much more integrated than when I last tasted this in 2005, yet tannins and balanced acity remain, suggesting it will hold for a year or two more. Good concentration of fruit, plums, cassis, possibly strawberry, plus exotic spices and white pepper. Some tannins on a long finish. A nicely aged, almost mature Shiraz but this is uni-dimensional. Nevertheless, it has improved since my first two tastings. I have two more bottles which I’ll keep for a couple of years. Try another one this time in 2008. 89 points.
