Food pairing: Sublime with goat's cheese and fine bellota ham.
The winery is in the Castilla y León region, and is located just outside of the Ribera del Duero D.O. so is not technically a Ribera. The bodega is located there deliberately to avoid the D.O. restrictions, enabling experimentation with varieties not permitted by the D.O. regulations. The varieties in this wine are predominantly Tinto del País (the local name for Tempranillo) and Syrah.
The 2004 Mauro boasts a gorgeous inky colour of exceptional depth, purity and beauty. Magnificent nose of crushed, freshly-picked blackberries, cloves and wet stones. The taste is phenomenal: dominated by blackberry, it has perfectly integrated notes of leather, oak, cocoa and minerals. Supported by a precise, restrained tannic backbone, this is a splendid wine of considerable nobility and elegance.
